The Invisible Majority of the Past
Monuments survive; the world around them mostly rots. Environmental archaeology recovers that vanished setting — forests, fields, floods, herds — from the microscopic and the discarded, reconstructing the landscape people actually inhabited.
The Proxies
Nature keeps records in materials that outlast the things they record:

What They Reconstruct
Pollen cores are the workhorse: drill a bog, and each centimeter down is an older snapshot of the region's vegetation. The unmistakable signature of the first farmers is the elm decline and rise of cereal and weed pollen — the pollen record watching Neolithic clearance happen, tree by tree, thousands of years before any text.
Zooarchaeology reads the bones of eaten animals: species ratios separate hunters from herders; kill-off patterns (the ages at which animals were slaughtered) distinguish herding for meat (kill young males) from herding for milk or wool (keep females alive for years); cut-marks record butchery; and tooth-eruption stages even fix the season of slaughter.
Proxies are indirect — mind the filters. Wind-pollinated trees (pine, oak) flood the pollen rain; insect-pollinated plants and many crops are badly under-represented, so raw pollen percentages are not a headcount of the vegetation. Bones face taphonomy — dogs, decay, and recovery bias reshape any assemblage before the archaeologist ever counts it. Reading proxies means reading through the filter that made them, not around it.
